Other canon things likely effecting his scent: he's been exposed to low-level radiation enough to increase his tolerance, The Ark genetically tweaked him to be a universal donor, and he's got a birth-control implant in his arm. CRAU additions that you're already aware of but are available for Good Stab to sniff out: alien symbiote in his brain, Danny's heart in his chest, soul-bonded to Gilia so gets mermaidy bling (and therefore associated sea scent) when it rains or he's near large bodies of water. Probably smells like a real weird mix to Good Stab, honestly.

INFO: Antiva is an amalgam of Italian and Spanish stuff, so those but Different somehow. Has a lump of Fade magic in his hand, the scent of which I'm gonna say is like eating an extra strong Fisherman's Friend. Also smells like actual tiger quite a bit, now.
